Breaded Chicken with artichoke and 15 min potatoes

I dredged chicken in milk and egg then in garlic and herb breadcrumbs. Bake in oven on 350 degrees for about 30 minutes.

15 minute potatoes were from Light foods cookbook. They were super easy and cooked in the microwave.

Steaming an artichoke was a first for me. Who knew you just eat the flesh off the leaves? I guess the heart is the most meaty part. You have to fill the pan up pretty full with water and then put the artichoke in a steamer basket because it takes about 20-30 min to steam and it will burn the pan if the water runs out.
