Pad Thai

Well this recipe was an adventure that I wanted to try and I think it turned out yummy despite forgetting the eggs. I got the recipe from the Hot Thai Kitchen blog. I used brown sugar instead of palm sugar and I thought it worked well. I made the sauce according to the directions.

I soaked the noodles in warm water for about 30 minutes. Next time I might do this in advance and leave it in the fridge. Then I heated some oil and cooked sliced chicken breast in my wok. I removed the chicken and added some garlic and sautéed for a minute then added the noodles, and sauce and continued the directions. I skipped step 2 all together.
