I wanted to find tortilla crusted tilapia at Costco but they didn’t have it so I bought tilapia and made my own crusting. I baked Panko in the oven at convent 375 for 5 minutes. Then I put the Panko in a bowl, egg and milk in another bowl and flour with salt, cumin, and garlic powder in another bowl. I dredged the tilapia in egg, flour, egg, then Panko. I baked it at 375 for about 15-20 minutes.
I served the tacos with stuff that I had in the refrigerator: plain yogurt, Siracha, queso fresco, spinach, avocado lime dressing.
On the side was pinto beans with penzys spices and Brussels sprouts.
