An end of the year celebration with Pilgrim friends of all generations. We planned to grill outside but the looming thunderstorms changed that after the recent flooding problems. We had a few brave friends who were still able to make it over despite the rain.
Slider bar complete with cheddar cheese, lettuce, red onion, bacon, avocado, sautéed mushrooms, and tomatoes. Condiments: mustard, Dijon mustard, ketchup, mayonaise, and Whataburger creamy pepper sauce.
Andy made the sliders on our cast iron griddle attachment for our stove. Directions were here. We used pioneer womans directions for the burger which included heavy cream and I thought they were delicious!
I roasted the corn in the oven which was really easy.
I also roasted cauliflower and HEB sweet potato fries in an oven together.
I also made the Green well salad from the Bread and Wine cookbook.
For dessert we had chocolate silk pie from Smitten kitchens cookbook and it was a hit!
All in all the meal was great and easy to prepare ahead of time so we could enjoy time with guests. We discussed school and everyone’s summer time travels. Perks of being teachers!
