Egg & Cheese Grits Breakfast Casserole

Super simple and a nice change to other breakfast options.  Sometimes you just gotta change things up. 

 From GBC womens brunch:
1 cup cooked grits, cooked in 4 cups water

3 eggs

1 cup milk

6 oz box Jiffy corn muffin mix

1/4 cup butter, melted

2 cups grated cheese

1 lb pork sausage, cooked, drained, crumbled
Beat eggs and milk.  Add to cooked grits.  Add corn muffin mix, butter, and 1 cup cheese and mix.  Pour into greased 9×13 casserole dish.  Sprinkle with sausage and remaining cheese.  Bake 30 min at 325 degrees.
