I went to Whole Foods an asked for pork loin, so the guy suggested a pork loin that looked like a steak. It was cheaper than the tenderloin so I went with it, but it’s so small for my crockpot…only 1.25 lbs.
This recipe is supposed to be served over mashed plantains but apparently you can only mash them if they are brown and mine is green so looks like that will have to wait for next time. Instead, I served it with mashed sweet potatoes and cranberry sauce. I love thanksgiving foods! The meat turned out really good! I added a little extra beef broth because it didn’t even cover the pork in the large crockpot but I’m not sure it was necessary. Total cook time: 8 hours
