For dessert I made a half recipe of Lightened Rice Pudding from Everyday Food Light (pg 111). I thought it was really good for a relatively healthy treat. The only bad part was waiting for it to cool. Ok, I didn’t wait because who can wait for dessert. Next time I might recommend cooking the rice for a little longer so it is softer.
